Revestimento em frutas com quitosana pura e misturada a outros materiais - Uma revisão sistemática

Resumo

Foi realizada uma revisão sistemática de artigos, que produziram revestimentos utilizando quitosana. Para pesquisa, utilizou-se do banco de dados, artigos que continham a palavra-chave revestimento de/com quitosana para frutas. A busca foi feita nas bases de dados Science Direct, Scopus e Web of Science. Foi encontrado 113 artigos. Dessa quantidade, foram selecionados 40, pelos critérios de inclusão e exclusão. Os revestimentos que foram produzidos apresentaram boas propriedades mecânicas e de barreira. Os revestimentos estenderam a vida útil das frutas, preservando as qualidades nutricionais, protegendo contra danos de impactos e demonstraram potencial antimicrobiano, inibindo a formação de fungos e bactérias.
